Candied Orange Peel

We always have orange peels around from making Breakfast Juice, and when I saw this recipe from Closet Cooking, I knew I had to try making candied orange peel.  They ended up tasting just like those chewy orange wedge candies that I loved as a kid.

Candied Orange Peel

  • 3 oranges — I like navel oranges
  • 1 cup sugar for syrup
  • 1 cup sugar for coating — fine-grained baker’s sugar works well, but regular sugar is fine too

Quarter oranges and remove the peel, and cut the peels into thin strips.  Bring a pot of water to boil, then add the peel and cook over medium heat for 15 minutes, then drain.

Combine 1 cup sugar and 2 cups water and bring to a boil.  Add the peel, reduce heat to medium-low and simmer for ~45 minutes.  Drain the peels.  I like to save the liquid — its now and orange-infused simple syrup.  Old-fashioned or margarita anyone?

Once the peels are well-drained but still moist, toss them in sugar.
